Chia seeds are a superfood that is packed with protein and is a great source of calcium, omega 3, and iron. They have almost 40% of your daily fiber suggestion which is yet another reason to love them.
This pudding is perfect for a breakfast parfait, or a healthy dessert with fruit on top. However you choose to eat it, I’m sure you will love it.
This bowl-full is a perfect size for feeding the whole family, but also keeps for about a week in the fridge, so you can enjoy it for days.

Easy Coconut Chia Pudding Recipe
Prep time: 5 minutes
Total time: 8 hours
Yield: 20 oz
Ingredients:
- 1 8oz can of coconut milk
- ½ cup chia seeds
- 1 splash of rice, or another nut milk
- 1 dash of vanilla extract
- ¼ cup maple syrup
- Pinch of cinnamon
Instructions:
- In a large bowl or Tupperware with a lid, gently combine all the ingredients.
- Put the lid on the container and place it in the fridge.
- Wait for 8-10 hours for the mixture to set.
- Store in the fridge and enjoy with fruit or plain for up to a week.
Notes:
This pudding is very filling, so you don’t need more than a little cup. 🙂
